Markham & Fitz started in 2014 when two University of Arkansas alumni Lauren Blanco & Preston Stewart pulled their savings together to buy chocolate making equipment. 

Markham & Fitz's mission is to celebrate people and the cacao bean. They practice sustainability like zero-waste initiatives, compostable and recyclable packaging, transparency in the supply chain, and sourcing high-quality cacao beans.

OMNOM CHOCOLATE REYKJAVIK:

Omnom is a small-batch, craft chocolate maker based in Reykjavík, Iceland. The chocolate maker was founded in 2013 by childhood friends Kjartan Gíslason and Óskar Þórðarson. Kjartan worked as a chef across Europe for two decades before discovering the amazing world of chocolate. Óskar worked in the fishing and start-up sector before launching Omnom. 

The company started as an experiment to see if the two friends could master how to make chocolate. From the start, they received positive tasting feedback. After receiving positive feedback, they set up a small chocolate-making lab inside a converted gas station and launched. Omnom's mission is to make the best chocolate possible using the highest quality of ingredients.

This chocolate bar by OmNom features gentle maltiness emboldened by floral aromatics balanced by lush red berries & combined with roasted and sea salted chunks of almonds.

MAROU, FAISEURS DE CHOCOLAT:

Marou was one of the first bean to bar makers in Asia. When Vincent Mourou left his advertising career in San Francisco, he moved to Vietnam to find himself. This is when Vincent met Samuel Maruta, a banker from France living in Saigon with his wife and two kids.

One day during a camping trip the two googled "cacao plantation" and headed towards a farm in Ba Ria Province with no address. On the way back to Saigon, the two decided to start Marou Faiseurs de Chocolat.

The two had nothing but a blender, an oven, cake tins, and Sam's kitchen. Samuel and Vincent continue to work with a tight network of small farmers who they buy the best quality beans from.

The cacao in Marou chocolate is roasted slowly and at a low temperature so you can truly taste their work and the terroir of each provincial origin. Marou has become a leading brand for pure dark chocolate, entirely made from Vietnamese cacao. 

Coconut Milk & Ben Tre 55%

Marou's first milk chocolate is made with Ben Tre cacao and coconut milk and is a bar of intense and balanced chocolate. Very creamy, sweet, and slight fruity acidity. The coconut milk makes for a wonderful vegan alternative to dairy. Coconuts are found in abundance in Vietnam and in the region of Ben Tre, so it was a nice compliment to their cocoa.

MANOA CHOCOLATE HAWAII:

Manoa is a Hawaiin based chocolate maker. Hawaii is the only state in the USA to grow cacao. The story of this maker began in the labs at the University of Hawaii in 2010 studying cacao as a crop for the state. Manoa started as college students with no money and bootstrapped their business with ingenuity and determination. 

Their original equipment involved a barbeque to roast and a tricycle-powered winnower to remove the cacao shells. Now Manoa is the largest chocolate maker in Hawaii, and it’s in the top ten of the largest bean-to-bar craft chocolate makers in the U.S.
