Akesson's Organic Chocolate Madagasdar Criollo 100%

It only makes sense Akesson's Organic Chocolate tops our list.

Akesson's Organic Chocolate is the first "Tree to Bar" chocolate maker. The Akesson family started with a single plantation in Madagascar. Today Bertil Akesson has expanded the companies cacao network with plantations in Madagascar, Brazil, and Indonesia. If you tried craft chocolate or world-famous chocolatier chocolate it is likely it came from one of Akesson's cacao plantations. Akesson's Organic Chocolate bars have won a multitude of awards and is regarded as one of the best craft chocolate bars on the market. 

The plantation which grows the cacao used to make this special bar of chocolate is located in the Sambirano Valley, in the North-West of Madagascar, the plantation produces since 1920 world-famous aromatic cacao. Besides 300 tons per year of Madagascar Trinitario cacao, very limited production of Criollo cacao (2 tons per year) is harvested separately. Making this bar a rarity. 

This chocolate has a very expressive cacao aroma with subtle fruity-sweet tartness and pleasant flavour notes that evoke citrus and red berries.

Marou Chocolate 100% Chocolate Bar

Many craft chocolate chocoholics are familiar with craft chocolate maker Marou. They were one of the first bean to bar makers in Asia.

When Vincent Mourou left his advertising career in San Francisco, he moved to Vietnam to find himself. This is when Vincent met Samuel Maruta a banker from France living in Saigon with his wife and two kids. One day during a camping trip the two googled "cacao plantation" and headed towards a farm in Ba Ria Province with no address. On the way back to Saigon, the two decided to start Marou Faiseurs de Chocolat.

The two had nothing but a blender, an oven, cake tins, and Sam's kitchen. Samuel and Vincent continue to work with a tight network of small farmers who they buy the best quality beans form. The cacao in Marou chocolate is roasted slow and low so you can truly taste their work and terroir of each provincial origin. Marou has become a leading brand for pure dark chocolate, entirely made from Vietnamese cacao. 

This bar is made from a blend of cacao beans coming from a variety of provinces in Southern Vietnam. Most of Marou's bars are single estate making this bar a unique treasure. This 100% Marou Chocolate is full-bodied with spice and juicy red berries, and its high cacao butter content makes for a very creamy and mellow experience.

Friis-Holm La Dalia Dark Blend, The Lazy Cocoa Grower 100%

Friis-Holm is a multiple award-winning chocolate maker, founded in 2008 by chef Mikkel Friis-Holm in the small Danish rural town of Lejre.

Mikkel's background as a chef focused on the potential of raw produce, and with his insight in cacao growing conditions and the production of chocolate from his previous work with the Californian quality chocolate brand Scharffen Berger, Mikkel knew he wanted to do something different to shake up the world. He saw huge culinary potential in working with the innate tastes of the cacao beans.

The quality of chocolate comes directly from the cacao bean and he went against the tide to involve the people behind the beans, the cacao growers into the process of making chocolate. The vision and goal of sourcing the highest quality of cacao, has made Friis-Holm one of the most renowned chocolate makers in the world.

This creation by Mikkel, the La Dalia Dark Blend, The Lazy Cocoa Grower 100% Dark Chocolate Bar, is an intense bar, with a blend of 10 different cacao growers from Nicaragua. This bar is full-bodied that unveils beautiful black cherry notes with pleasant acidity.

Omnom Peru Gran Nativo Blanco 100% (Limited Edition)

Omnom is a small-batch, craft chocolate maker based in Reykjavík, Iceland. The chocolate maker was founded in 2013 by childhood friends Kjartan Gíslason and Óskar Þórðarson.

Kjartan worked as a chef across Europe for two decades before discovering the amazing world of chocolate. Óskar worked in the fishing and start-up sector before launching Omnom. The company started as an experiment to see if the two friends can master how to make chocolate.

From the start, they received positive tasting feedback. After receiving positive feedback, they set up a small chocolate-making lab inside a converted gas station and launched. Omnom's mission is to make the best chocolate possible using the highest quality of ingredients. 

This limited edition chocolate bar by Omnom uses rare, recently discovered Gran Nativo Blanco beans from Peru. This bar is perfect for cacao enthusiasts and pure chocolate lovers.

Chapon Venezuela Rio Caribe 100%

Chapon Chocolat is a creation by Patrice Chapon, a multi-award winning chocolatier and chocolate visionary.

Before becoming his own chocolatier, he worked various culinary jobs. One of Patrice's early culinary jobs was as an official ice cream maker for Buckingham Palace, where he satisfied the British royal family’s sweet tooth with his fresh fruit sorbets and ice cream. In London, Patrice found his true calling, chocolate. He fell in love with chocolate displays at Harrod's department store. 

When he returned to France in 1985, he began making chocolates in his workshop. Fast forward to present day and his chocolates have won numerous awards, Chapon now has six stores, five in France and one in Japan.

Having shared the 100% tablet with discerning chocolate experts and bean-to-bar novices alike, we always get the same reaction of joy and surprise. For the purist the nuanced notes of dried fruits and wood and for the newcomer the familiar note of a chocolate brownie. Great snap with a creamy texture and low acidity, there is barely any bitterness.
